Daily Blog: Healthy Date Scones & Meal Prep Sunday!

Happy Sunday!





Today's breakfast was porridge (oats, almond milk, and cinnamon) topped with banana, blueberries and a tamarillo. My favorite combo ever!







It's 9am now, so I thought I would start on my meal prep for the next week. 
As per usual I'm having baked sweet potato for some healthy carbs. I grated fresh turmeric on top to help ease some of my muscle injuries I have at the moment, as well as some salt and pepper. I'm trying out this brown rice oil for a change today. 




I'm also baking some broccoli (with the stems, because they're my favorite part.) I sprinkled some sunflower seeds on top for added texture and nutrients. Plus the usual oil and seasoning. 








For a little afternoon treat, I thought I would attempt some healthy date scones! I don't have an actual recipe to go by, but I made Paleo hot cross buns using Lola Berry's cookbook, so I'm just going to adapt the recipe from that. 

Here's what I mixed together:
 
 2 cups ground almonds
1 cup buckwheat flower
3 scoops vanilla protein powder
1 tsp baking powder
1 tsp cinnamon

Mix it all with a whisk, then add:

1/2 cup dates, chopped
3 eggs
1/2 cup coconut oil, melted
1/4 cup maple syrup






They turned out really good! I need to work on making them a little more moist, but they totally satisfy my date scone cravings.




Mum and I are off for a run and were going to get in some mileage today.







15km later and both of us are really happy with keeping a quicker and steady pace the whole way. Time to reward ourselves with some lunch!





We ended up splitting a Japanese Pancake that had a mushroom salad on the side. Mum had already eaten her half by the time I had got back with our smoothies. I did buy a protein ball from there as well, but I was so hungry after the run that I downed it in about 0.2 seconds.




Soy flat white to warm me up a bit too!




Home again and I've just spent ages in the shower enjoying the hot water. For the rest of my meal prep, I've just got grill my tofu and assemble everything.










Just half a cup of brown rice in each container with the vegetables I've already cooked. I also added some frozen beans for color extra vitamins.




This satay sauce smells incredible. I probably should have made my own, and I will next time, but this one was a quick option. The ingredients are good for you too.





And there we go, healthy lunches prepped for the week! This will definitely keep me fueled for my workouts.






I attempted to make up yet another recipe for dinner. My brother and Dad are having regular meatloaf, so I thought I would make a vegetarian version! I just mixed together brown rice, oats, lentils, carrots, celery, onion, garlic, mushrooms, herbs, and some eggs. We will have to see later on if it turns out OK.




Time to get some blog work done! There's a post I really want to get up tonight, so I'm going to try get that edited and ready to go. Feeling a bit hungry and thought that I might as well try one of my meals.





Seeing as it's not Sunday without a cheeky dessert, I thought I would try out a recipe we found in a magazine. They're apple pots made with almond milk, coconut flour, cinnamon, coconut oil, and diced apples. Healthy and delicious!




Dinner time!
Our vegetarian loaf turned out really good (although it did fall apart!) and my Mum made a spicy tomato sauce to go on top. We also made some wedges to go on the side and a yummy salad to get some more vegetables on to our plates. It was all so good!




My little dessert pots turned out really good! So easy for a quick dessert. Kinda tasted like a healthy apple pie.




I needed to get some blog work done, but as per usual I procrastinated with YouTube and ended up cry-laughing to Jimmy Fallon videos. He's the best!





A little bit of multi-tasking before bed! I'm just packing my gym bag for tomorrow and making sure I have everything I need. I'm also using this face mask while I do it to repair a bit of damage from the week. Although, I must say that it has cleared up a lot since going dairy-free. Really happy with how it's behaving lately!


Another productive Sunday to finish the week. I'm itching to get back to the gym tomorrow, but I think I still won't be able to do any upper body work because my shoulder is feeling tender.

  1. Seriously Steph...my mouth is watering! You are so good with all your food prep, i need to start making different things and planning appropriately. I love being in the kitchen but seem to stick to what I know and sometimes it gets boring. Going to jot your recipes down now!! :)
