My Favorite Healthy Pancakes

You guys already know what a huge foodie I am and I've recently discovered a pancake recipe that is both clean and healthy, yet so filling and delicious. I've been making these as a Saturday/Sunday morning treat, and as something a little different to my usual porridge. Pancakes are major food-love for me, so to be able to enjoy a healthy version on a regular basis is amazing.

I actually adjusted this recipe from what I use to make my porridge every morning, so it's even easier to put together and I know I'm going to get the same energy out of it too! Obviously these aren't your super-fluffy American pancakes, but they are still soft and go amazing with fruit toppings.



Ingredients: (serves one)

1/3 cup oats
2/3 cup milk 
1/2 a banana 
1/2 teaspoon cinnamon
1 teaspoon chia seeds 
1 egg 
Coconut oil,  for the pan

Optional: add a scoop of protein powder for extra flavor and to keep you fuller for longer!

Whisk all of the ingredients together in a bowl, or for a quick and easy alternative, place all them in a blender/Nutri-Bullet and let it do the work for you! I do this every time now and it's amazing.

Melt 1/2 a teaspoon of coconut oil in a pan over a medium-high heat. 
The pancakes a bit more delicate than usual, so making smaller sized ones is best. 
Remember to be gentle when you flip it. 




I love serving these with the other half of the banana, some blueberries, and Greek yogurt. By using the Nutri-Bullet it's a really quick process. I usually get my pan heating up while I put all of the ingredients together, and it's all cooked in about 15 minutes. So good!

  1. Ohh these look and sound delicious! I don't eat eggs though but it's easily replaced by some soaked chia or flax seeds. I once made pancakes by mixing some flour, almond milk and a banana and they were delicious! But not so easy to fry, they kept falling apart haha! Definitely going to try these ones with the oats :)

    1. I never thought of replacing eggs with soaked chia seeds, what a great idea! That sounds like another great recipe I must try. Haha yeah these ones I make a small-medium size so they don't rip in half, but they haven't broken apart much. I hope you like them!

    1. Keep trying! Maybe if you add something else to bind them together? I find the oats in this recipe stops them from breaking : )
