Recipe: Healthy Protein Donuts!

You heard me right, donuts that can fit your macros and taste great too. It's a miracle! 
I'm not afraid to have the occasional treat, but being able to make something that's nutritious too is the ultimate goal. Say the word Protein and I am there! That's exactly why this recipe I found on body-building.com grabbed my attention and I desperately wanted to make them ASAP. This website is amazing for fitness and nutrition tips that will help you no matter your level of fitness. 
It's a super-simple recipe to make, all with ingredients I already had in the cupboards.They have no refined sugar, easily made into a GF option, and serve as a perfect post-workout treat!

I have changed this a little to make it a basic recipe, so that you can add whatever flavors/spices you want (perfect for Autumn baking!) The ingredients are very adaptable as well. You can always change the type of flour to suit your dietary needs, or adjust how sweet you want them to be. Turn them into chocolate, pumpkin spice, or whatever flavor protein powder you love most.


Ingredients: 
(Makes 6 medium donuts)

60g vanilla protein powder

6 Tbsp organic Stevia blend (I only used half and it was fine)

1/4 cup + 2 Tbsp gluten-free flour (or flour of your choice)

1/2 tsp baking powder

1 egg

1/4 cup Greek yogurt

1 Tbsp melted coconut oil (or butter)

1 tsp vanilla essence


For the glaze: 

40g protein powder (vanilla or chocolate)

2 Tbsp organic Stevia blend

1 Tbsp cocoa powder 

1/4 cup water

2 Tbsp Vitafiber syrup (or any other stickey syrup) 

Method:

Preheat your oven to 350*F or 175*C

Line a baking tray with non-stick baking paper

Whisk the dry ingredients together into a medium bowl

In a small bowl, mix the wet ingredients until smooth

Add the wet mix to the dry and stir until there is no clumps and it forms a dough

Spoon the mix into an incing bag (or plastic sandwich bag) and cut an inch off the corner

Pipe the batter into circles on the baking tray and pinch the ends together

Bake for 8 minutes or until fully-cooked and golden. Allow to cool

To make the glaze, simply combine all of the ingredients together in a small bowl and mix until smooth and thick. Add the water a Tbsp at a time to get the right consistency

Glaze the donuts, add some sprinkles or other toppings, and enjoy!


Tips: 

Have some extra yogurt on hand to use if you dough comes out dry

Wet your hands when molding the donuts to stop them from cracking

Melt some extra coconut oil and glaze the top of the donuts before baking

Keep them in an air-tight container and they will last all week!
