Recipe: Peanut Butter Protein Bars

I am constantly on the hunt for new snack ideas and other ways of beating hunger with good nutrition. Peanut butter has become a must-have in my cupboard, and something of an addiction too (anyone else?) 
It's a great staple to have if you need a little extra protein in your diet and it's full of good fats as well. I started searching for any kind of PB recipes on Pinterest, and after reading a few different blogs I put together my ideal combination for a healthy and delicious snack bar! There's very few ingredients needed and you could whip up a batch of these in ten minutes. Easy to make, and oh so delicious.

Makes 12 servings





Ingredients: 

1 cup of Peanut Butter (a runny consistency)
1 cup Oats
1 scoop (35g) Vanilla Protein Powder
1/3 cup Maple Syrup 
Pinch of Salt
Shredded Coconut (optional)


Some recipes use honey as a sweetener, so go with your personal preference. If you do choose maple syrup, make sure that it's the real deal and not the "maple flavored" imposter.





Place all of the ingredients into a food processor. If you don't have one, you can easily mix everything together in a large bowl with a spoon. 

Blend until you have the consistency of cookie dough and the mixture holds together. 




Spread the mixture into a baking tray and flatten with a spoon or spatula. As an added option, you can sprinkle some coconut on top for texture. 

 Place in your freezer for thirty minutes to firm up. Cut into snack-sized pieces with a sharp knife and keep them in an air tight container in your fridge. Now they're ready for you to grab whenever you need them!





It's as simple as that. Super-quick and easy to put together. You could easily take a few of these to work with you as a snack, or use it as a post-workout treat after the gym. All of the ingredients are good for you and will help fuel your day. Just try not to eat them all in one go!
