Halloween Baking: Easy Spider Cookies!

Who doesn't love a bit of holiday baking? You guys know how much I love spending time in the kitchen trying out new recipes, and Halloween just makes is so much more fun! This won't be as healthy as my usual baking, but treats are necessary for this time of year, right?

These are super-easy to make and require little to no decorating skill. The cookie recipe is from the Whittaker's Chocolate book, which is New Zealand's best brand of chocolate and my all-time favorite! This book is full of the most amazing looking desserts and treats. There's only six ingredients in these cookies and they're amazing to use as your go-to basic recipe. Just add your favorite chocolate!


Ingredients:
(makes 15+ cookies)

1 & 1/2 cups (190g) plain flour
1/2 tsp baking powder
125g butter, softened
1 cup (200g) brown sugar
1 egg
1/2 tsp vanilla essence 
Chocolate drops and buttons for your spiders


 Method:

Preheat oven to 200*C 

Line a baking tray with baking paper

Sift the flour and baking powder into a medium bowl

Beat the butter and brown sugar with an electric mixer until light and creamy

Add the egg and vanilla essence, and continue to beat until mixed well

Add the flour mixture to your butter mixture and combine until the flour in just mixed in

Roll into small balls and place on the prepared baking tray. Space them out well and flatten slightly. You can make them as small or as big as you want, the ones I made too up two baking trays instead of one. 

 Place 2-3 small chocolate drops or 1-2 buttons on top of each cookie. 

Bake for ten minutes or until golden brown. 



Decorating 


Melt 1/2 cup of  your remaining chocolate drops in the microwave for about 1-2 minutes, checking it every 30 seconds. 

Pour into a piping bag (or sandwich bag) and cut a tiny corner off with scissors. 

Draw eight legs on each button with the melted chocolate.

These are perfect if you are looking for something easy and delicious to make for your family/friends on Halloween. They also stayed soft and chewy for days, so you can make them in advance if you need to.
